Kodiak Pancakes with strawberries and chocolate chips

Only 5 points for the cakes and 1 point for the teaspoon of mini chips mixed into the batter with blueberries. It’s a full dinner size plate full. Delish!  Dark Chocolate Kodiak Pancake Mix are great too, love those!  6 points total!  Unreal, I’m in heaven!  Just follow the instructions on the Kodiak Buttermilk Power Pancake Mix and add in whatever you like!

Banana Bread Loaf in 3x5 pan by @iamhopefull from WW

What???? I get to eat the ENTIRE loaf of Banana bread for a measly 2 points??? Madness. Sheer madness! Sheer deliciousness! Goodness this recipe from @iamhopefull is just amazing. Thank you dear! You’re a doll!  It started me on creating these wonderful goodies in many varieties and flavors.  This will be a breakfast favorite for sure. Here is her recipe below: 

Preheat oven to 350 degrees 

Mash one banana with a fork. Add 1 egg. Add one teaspoon imitation vanilla. Mix well with fork. Next add 2 Tablespoons quick oats, 2 Tablespoons Kodiak pancake mix, one teaspoon baking powder. Mix well. Pour into a spritzed with Pam, 3x5 loaf pan. Bake 30-35 minutes. I baked mine 30 minutes. 

YES a whole 3 by 5 inch loaf for ONLY 2 points!!! Wowsa!!! I love it! Mmmm mmmm mmmm😋

Barby's Maraschino Pistachio Nut Chocolate Cake-lets

Barby's Maraschino cherry pistachio nut chocolate cake-lets

6 points for everything on the lunch plate.  2 points for each of the three cake-lets

Wowsa this is a fav of mine!  I will post more cake-lets soon.

Ingredients:

1/8 cup Dark Chocolate Kodiak Power Pancake mix  1 point

1/8 cup Quaker quick oats   1 point

1 egg   0 points

1 Tablespoon unsweetened cocoa  0 points

1 teaspoon baking powder  0 points

5 Maraschino cherries diced in pieces  2 points

9 miniature marshmallows, cut each in half to make 18 pieces  1 point

1 whole banana mashed up  0 points

14 shelled pistachio nut kernels crushed  0 points

Put all ingredients in a bowl together and mix well with a fork.

Directions:

preheat oven to 350 degrees

Spritz 3 loaf pans with Pam and dust flour inside, size 3-3/4" by 2-1/4"  loaf pans.  Mine is a Wilton 8 slot pan from amazon

Pour mix equally inside all three pans.

Bake at 350 degrees for 26 minutes or until tooth pick comes out clean

Remove from pan and put on rack

Let cool completely.

Add a dusting of powdered sifted sugar over the tops of the cake-lets.

Put a squirt of Reddi Wip on top and a cherry.

Cheesy chicken Runzas!

I love Runzas and have made many, as some of you noticed long ago.  I was in a real Runza craze.  I put everything inside them!  Lotsa fun.  This recipe is for 3 Runzas, and I divided it out and it comes to 4 points for each delicious Runza. I cut one Runza in half in the picture, both halves equal 4 points.

Ingredients:

3 frozen dough ball Rhodes dinner rolls. 9 points

3-4 ounces diced chicken, diced real small 0 points

2 Tablespoons Alouette basil parm cheese spread 2 points

1/2 diced tiny celery stalk 0 points

2 teaspoons 2% milk   0 points

egg for egg wash on top 0 points

optional, a pinch of parted parm cheese on the top of the Runza roll.  

seasonings were Lawry's seasoned salt to taste, a couple shakes of dill weed, a couple shakes of garlic powder, cracked pepper

Directions:

Thaw, and raise 3 white Rhodes dinner rolls on a shallow pan as stated on their packaging.
Lay saran on top of the rising rolls.  
It takes me 4 hours to raise my 3 rolls.
Roll out each of the rolls into a circle, big enough to hold one third of the chicken mixture.  See below for chicken mixture.  
Place one third of the chicken mixture on each rolled out dough circle.  Fold in half and crimp the edges with a fork.  
Whisk an egg and lightly, brush some egg mixture on top of each roll for a wash.
Sprinkle with a pinch of grated parm cheese.
Bake for 17-18 minutes at 350 degrees.  Or golden brown. 

Chicken mixture for the inside of the Runzas.
  
In a bowl add 2 Tablespoons of basil parm Alouette cheese spread. Add 2 teaspoons 2% milk and mix up.   Add in the diced chicken and celery with the seasonings and mix. Add in chicken slowly a little at time to be sure it is not too dry with too much chicken in the wet mixture.

The three runzas were 11 points, and divided by 3, for one Runza at 4 points.  Best 4 points you will ever eat!  Enjoy!  Barby  :)

Chocolate ice cream

This is the 4 point version below.  You can change the sugar to 1/4 cup to lower the points to around 3.  You will need to divide out how many cuplets of ice cream you are making and whether you use 1/3 cup sugar or 1/4 cup sugar.  I have done both and like both. 

Ingredients:

1 cup 2% milk

1/2 cup non fat dried milk

1/3 cup sugar

1/8th to 1/4th cup of unsweetened cocoa.  It depends on how chocolate-y you want it.

4-5 cups ice cubes

In your Vitamix add the milk, then dried milk, then 1/3 cup sugar, then cocoa.  Mix up in blender for 5 seconds or until mixed.  Next add 4-5 cups of ice cubes.  Blend on high speed until thick.  About 1 minute is all it takes at most.  Divide into 1/2 cup Glad cuplets and freeze.  Depending on how much you put in each cuplet is what decides the points.  I have used 1/4 cup sugar instead of 1/3 and it was fine, but I do like the 4 point version best.  More ice bulks it up to make more, but can dilute it a bit.  You decide, play with what you like best.  4-1/2 cups of ice is what I use.  Enjoy!  Barby  :)


Barby's Taco Hash


Barby's Taco Hash 8 points (7 without the guacamole)

I posted this on the WW site and here is the recipe!  

3 Late July tortilla chips  1 point

2 large olives sliced 0 points

1/8th sweet red pepper diced 0 points

2 T diced red onions 0 points

1/2 corn on cob sliced off the cob 0 points

1 T homemade guacamole 1 point

90/10 hamburger fried 3 ounces is 4 points

cherry tomatoes (I used my home grown) 0 points

Grated Cheddar cheese 1/2 ounce 2 points

Just a few pieces of diced lettuce 0 points

Seasonings of your choice

Directions:

Fry 3 ounces of hamburger with onions and peppers in your fav taco seasoning or just Lawry's seasoning with cracked pepper, add in boiled hot corn last.  Place on plate.  Layer some diced cherry tomatoes, lettuce and cheese on top.  Place 2 sliced olives on top.  Add 1 T of homemade guacamole on top.  Perch 3 tortilla chips on the side of it.  I crunch them on the whole Taco Hash and that way I have crunch in every bite!  It's filling.  It's sublime.  Mmmmmm enjoy with sliced fresh peaches and watermelon! Barby's filet mignon fettuccine alfredo

9 points of heaven my dears!  Barby's Filet Mignon Fettuccine Alfredo

Breakdown:

Peas 0 points

fruit compote 0 points

broccoli 0 points

2 ounces of trimmed lean sliced thin smoked grilled filet mignon 2 points

1 ounce Amish noodles 3 points

My homemade Alfredo sauce 3.5 points but I had to round it up to 4 points


 Directions:

Scroll down and make my homemade alfredo sauce recipe.  The recipe may roll onto page two of this blog.  Use 1/2 of the recipe or 1/4 cup sauce on your pasta.

Keep the 1 ounce cooked and drained noodles in a pan and mix in the warmed sauce and some diced broccoli.  Plate the pasta with sauce and gently lay thinly sliced filet mignon on top and in it.  That's it!  Dig in!

I make a double recipe of my sauce and freeze it in 1/4 cup amounts in Glad tiny cuplets.  Then all I have to do is take one out and warm it in my tiny sauce pan.  It's quick and easy.  I even freeze smoked and grilled sliced filet mignon in packets in my freezer and warm them slightly in the microwave.  Never cooking it as I like medium rare steak.  You can see how easy this is when you have those 2 items frozen ahead.  The sauce takes me 5-10 minutes to make.  I often put smoked grilled chicken slices on top also, instead of steak.  Hey just mix up things to keep you happy!  :)  Enjoy!  Barby
