Barby's Almond Lemon Poppyseed Cherry Wonder Cake-lets! The lemon in this is the lemon curd frosting I made up. The cake batter has no lemon it in, but I added sweet maraschino cherries and it is yummy!

7 points for all three cake-lets shown on this lunch plate. One on top, one on the right, and the sliced one.
2.3 points for one frosted cake-let. Eat one and freeze the other 2 for later! The frosting recipe is on here too.
Ingredients:
1/8 cup Kodiak Power Cakes Almond Poppyseed waffle and flapjack mix 1 point
1/8 cup quaker quick oats 1 point
5 maraschino cherries diced 2 points
1 egg 0 points
1 tsp baking powder 0 point
1 over-ripe banana mashed up 0 points
1 tsp imitation vanilla 0 points
Directions:
Pre heat oven to 350 degrees
Spritz the loaf pans with Pam and a dash of flour so they won't stick.
Dump everything into a bowl and mix with spoon well. I drop the diced cherries in the dry ingredients first to coat them so they don't sink to the bottom of the cake-lets.
Bake at 350 degrees for 24 minutes when using the three 3 by 2 inch cavity loaf pans, or if you make two 3 by 5 inch loaf pans bake for 30 minutes or until tooth pick comes out clean. Remove from pans and cool completely on rack. Add a dash of light reddi wip and a maraschino cherry on top for garnish. That's it! Simple! Luscious for sure!
Optional 3 point frosting and this makes 3 cake-lets 7 points. This will be a glaze frosting drizzled over all three cake-lets. I highly recommend it, it makes it!
1 tsp lemon curd (1 point) mixed with 1 Tablespoon powdered sugar (2 points) and a teaspoon of milk (0 points) to a glaze consistency. Drizzle over the 3 cakes.
3 points for frosting.
