Barby's Carrot Cake Cake-lets

Carrot Cake Cake-lets by Barby

Yum!  Yes, you get 3 cake-lets for only 5 points!  This is shown on a lunch plate.  Next time I'm adding two teaspoons of brown sugar, (I’m a sweet freak) but you may like it like this too.  It is 7 points for 3 cake-lets if you add the extra 2 teaspoons sugar.  2 points per cake-let without it, so add in sugar points if need be and then it would be 2.3 points per cake-let, I think it needs it.  Also it is a must to let this cool all the way to cold or you taste the baked carrots too much.  I loved this one too.  They freeze well. 

Frosting drizzle recipe below too, an extra 1/2 point. I guessed on that so you do the math. :)

Preheat oven to 350 degrees 

Ingredients for cake-lets:

1/8 cup Kodiak buttermilk power pancake mix  1 point

1/8 cup quaker quick oats  1 point

1 mashed up banana 0 points

2/3 Tablespoon shredded coconut  1 point

1-1/2 Tablespoon finely grated carrots  0 points

1 egg 0 points

1 teaspoon baking powder  0 points

1 Tablespoon crushed pineapple 0 points

1 Tablespoon crushed walnuts 2 points

1 dash of clove 0 points

1/4 teaspoon (or more if you like) ground cinnamon 0 points

1 tsp imitation vanilla 0 points

optional: 1 Tablespoon finely grated zucchini 

Dump all together in bowl and mix up with fork well.

Pour into three 3-3/4” by 2-1/4” loaf pans that are spritzed with Pam and dusted with flour.

Bake at 350 degrees for 24 minutes or until toothpick comes out clean.

Frosting Ingredients:

Mix together with spoon in small bowl:

1-1/2 Tablespoon reduced fat cream cheese  2 points

1 Tablespoon Powdered sugar 2 points

2-4 teaspoons 2% milk.  Slowly add just until drizzle consistency. 0 points

This makes enough frosting for about 8-10 cake-lets.  I counted a drizzle as a half point.  Dust with sifted powder sugar and then add frosting if you'd like.  YUMMY slimmed down carrot cake!
