Strawberry Banana Cake-lets with Lemon Curd Frosting

Strawberry Banana Cake-lets with Lemon Curd Frosting

Preheat oven to 350 degrees

You get the entire plate for 7 points, all three cake-lets.  Dividing for each of the three cake-lets makes it 2.3 points per cake-let.  Save a couple for later!  This is just like the recipe of the banana loaf posted earlier, however I added diced strawberries and a lemon curd glaze frosting.  The 7 points for all three cake-lets includes the frosting. VERY scrumptious!  

Ingredients:

1 ripe banana 0 points

1/8 cup Kodiak buttermilk power pancake mix  1 point

1/8 cup Quaker Oats  1 point

1 tsp baking powder  0 points

4 small strawberries diced real small (dust them in some of the pancake mix so they won't sink) 0 points

Directions:

Spritz three 3-3/4 by 2-1/4 inch loaf pans with Pam and dust with flour

Dump all ingredients into a large mug or bowl and stir well with a fork

Pour into prepped pans and bake at 350 degrees for 24 minutes or until a toothpick comes out clean.

Remove from pan and put on rack.  Sift powdered sugar over the top as it tastes best with that and adds a sweetness to it.  Or you can add a teaspoon of sugar in the batter to sweeten it a bit more. You would need to add on a point.


Drizzle glaze frosting over all three cake-lets with the frosting below:

5 points for the frosting on all 3 cake-lets

1-1/2 Tablespoons powdered sugar 3 points

Teaspoon or maybe two of 2% milk, add slowly as you stir, only add milk until it can drizzle 0 points

1 teaspoon lemon curd in a jar.  I use Dickinsons. 1 point

1 teaspoon whipped butter melted 1 point 

Mix with spoon the butter, sugar and lemon curd and then slowly add milk until drizzle consistency. Remember to dust with sifted powdered sugar on the tops of the cake-lets.  Add a dollop of Reddi wip too, with a half strawberry on top.
